Wahoo Salad

This started as leftovers. We had hot Wahoo and rice for dinner.  I threw the leftovers together and put them into the frig.  Next day I stared at it and  thought  “what am I going to do with this!”   I’m really good at leftover creations.   So I added some mayo and mixed it up.  Now I make it all the time.  Well, when we get Wahoo.  Great cold dinner for hot summer days!

You’ll need to make some white rice. 

Cut the Wahoo into about 1/4 inch medallions and sauté with butter, garlic, dill weed, (always lots of dill weed)  onions, you know all the good stuff that tastes good with fish.  Hmm measurements are missing, well it depends on how much you are cooking.  (I’m bad aren’t I?) 

Now you can either eat hot with the rice, then  throw the leftover fish and rice into one pot and throw it in the frig.  Next morning add some mayo, just enough to hold it together. 

 Or cool the rice and fish off for a couple hours and add the mayo, again just enough to hold the fish to the rice. 

 Sandi gets really mad when I give her a recipe like this.  She likes to use measuring spoons!
