Marinades Italian Salad dressing. I’ll always keep a bottle in the frig for a last minute marinade. Just marinade your steaks in for 15 to 30 minutes before grilling. This also puts oil on the steaks so you don’t have to worry about them sticking to the grill. Or you can use any oil based dressing depending on your taste buds. Works great and simple to throw together. Wahoo or Dorado I did this for a family reunion and everyone loved it. Olive oil, crushed garlic, dill weed and lemon pepper. Add all your spices to the olive oil, and mix well. Just dredge your fillets through the mixture before putting them on the grill. Simple for the microwave Thin sliced fish is the best for this, about 1/4 inch thick. Squeeze some fresh lemon over your fish, sprinkle some dill weed and almond slices over the top. Cover with plastic wrap and cook in the microwave. Only takes a minute or two depending on your microwave. Nice light fish with a piece of garlic bread and a salad. Broiling I like to sprinkle with lemon pepper, garlic and onion powder. Sometimes I will sprinkle the spices on heavily and use them as fish burgers with lettuce, tomatoes and lettuce. Lighter fare fish sticks, great for fish tacos! Cut your fish about 3 inches long, and about 1/2 inch square. Or use larger fillets for healthier fish and chips. (like tarter sauce is healthy) Whip an egg white with cold water until foamy. You’ll need bread crumbs, or panko dredge the fish sticks through the egg white and coat with bread crumbs. Line them up on a cookie sheet and put under the broiler. Turn when the bread crumbs turn brown. This makes up for deep frying the potatoes right. I learned somewhere to slice the potatoes, potatoes chip thin, and broil, they are not bad. And better for you! |
