Dorado Parmesan

When we lived on Guam and when it was Dorado season, it was Dorado season.  We had it almost every single day for 3 months.  I came up with this  in a desperate effort to come up with something new! 

When I make spaghetti sauce, I make a gallon of it and put it in the freezer.  After I came up with this I started making sure I put up a couple small containers that were just enough for the two of us for this recipe. 

You will need

dorado (mahi mahi) fillets

oil to cover your fry pan

1 egg beat with cold water

bread crumbs

parmesan cheese

1 cup spaghetti sauce  (any flavor)

It’s really pretty easy and tastes great. 

Heat the oil for frying, and turn the broiler on

Dredge the Dorado fillets through the egg/water mixture, then coat with bread crumbs.  Put in the hot oil.  cook both sides until golden brown,  Pat the oil off.  (not too hard or the bread crumbs come off)   then place on a cookie sheet, scoop the spaghetti sauce onto the fillets and sprinkle heavily with parmesan cheese.  place 2nd shelf down from the broiler, not the top shelf until cheese is bubbly. 

We eat ours with hot rice and small salad with rice vinegar!

Sometimes I will substitute sliced pepper jack cheese for the parmesan, or a little of both.  If  I use both, I put the pepper jack on before the spaghetti sauce, then parmesan on top.
